Serve Dragon Fruit

Enjoy the exotic dragon fruit on its own with a dash of lime juice.

The dragon fruit, also known as pitaya grows from a night flowering cactus plant. It has an oval-shaped, ornamental skin, and grows in Southeast Asia and Central America. The dragon fruit has a sweet, juicy taste that blends the flavors of the kiwi and honeydew melon. Available in bright pink and creamy white varieties, the flesh of the dragon fruit resembles the texture of a kiwi, and is embedded with small, black edible seeds. There are myriad ways in which you can savor the unique flavors of the beautiful dragon fruit. Add this to my Recipe Box.

Instructions

1. Serve the dragon fruit fresh. Cut the fruit into half and use a teaspoon to scoop out the flesh and seeds from each cut half. Serve chilled. You can also enhance the presentation of the dragon fruit while serving. Gently scrape out the dragon fruit flesh with a spoon from the edges of each cut half. Slice the flesh into cubes. Place the cubed dragon fruit pieces back in the skin for a striking fruit decoration. Sprinkle lemon or lime juice according to taste and serve.

2. Blend a dragon fruit with a banana and 1/2 cup of yogurt in a blender, to prepare a healthy dragon fruit smoothie. You can also combine the dragon fruit and yogurt with any fruit or fruit juice of your choice such as figs, strawberries, raspberries or pomegranate. Drink the fruit smoothie plain or pour it over your cereal mix.

3. Combine dragon fruit with herbs, spices and salad dressing to prepare a salad. Finely chop two celery stalks, 1 dragon fruit and 1 bell pepper and set in a bowl. Prepare the salad dressing in a separate bowl. Mix together 1/2 cup of cottage cheese, 1 tbsp. olive oil, and 1/4 tsp. each of salt and pepper until smooth. Pour the salad dressing over the chopped dragon fruit and vegetables. Toss well and serve.

4. Prepare a refreshing dragon fruit sorbet. Scoop out the flesh from two dragon fruits. In a mixer, blend the dragon fruit flesh along with 2 tbsp. of sugar, 1 tbsp. of lemon juice and 3/4 cup of cold water. Run the mixer for three minutes or until you achieve a smooth consistency. Pour the mixture in an ice cream maker and churn until frozen. Serve immediately or freeze and use later.
