Haupia, a soft coconut candy, is a delicious traditional Hawaiian dessert. It's made extra-special here with fresh coconut milk, but you can use canned instead. Makes 16 to 24 pieces. Add this to my Recipe Box.
Instructions
1. Make the coconut milk first. Begin by placing the grated coconut in a bowl.
2. Pour 2 1/2 c. boiling water over the coconut and let stand for 15 minutes.
3. Strain the coconut and water through a double thickness of cheesecloth, squeezing out as much coconut milk as possible.
4. Store the remaining grated coconut for a garnish.
5. Mix the cornstarch and sugar in a large pot. Whisk in 3 c. coconut milk to create a smooth paste.
6. Simmer the mixture until it thickens and starts to leave the sides of the pot.
7. Pour the mixture into a greased 8-by-8-inch pan and allow to cool.
8. When the mixture has completely cooled, cut into squares and serve on squares of ti leaves.
9. Garnish with grated coconut.
