In Hawaii, major life events such as weddings, graduations and a baby's first birthday, are celebrated with a feast called a luau. Catering companies, restaurants and home cooks serve luau-style food reminiscent of the ancient Hawaiian tradition. Add this to my Recipe Box.
Authentic Luau Menus
Hawaiian luau foods include, but are not limited to, poi, a taro root paste, and poke fish marinated in citrus juice and served raw. The Polynesian Cultural Center indicates that lomilomi salmon, introduced into Hawaiian cuisine by "western sailors," and considered a traditional dish, can be made by mixing raw salmon with tomatoes, onions and seasonings.
Adapted Luau Menus
Celebrations.com recommends serving roasted pig, fish and pork fried rice. Brides.com recommends serving grilled chicken dishes, sweet potatoes and coconut pudding. Tropical beverages such as Mai Tais and Piña Coladas often complete luau menus.
Considerations
Catering companies and restaurants serve select traditional luau dishes based on clientele tastes and ingredient availability. Generally speaking, outside of Hawaii, traditional foods such as poi and poke fish are often excluded from luau menus.
