Make Tiki Hut Cupcakes

A thatched roof is characteristic of a tiki hut.


Tiki hut cupcakes are an ideal dessert for your next luau or beach-themed event. These cupcakes require minimal piping skills and are easy to put together. Coordinate the decorative flowers on the cupcakes according to the color scheme of your party. Hand pipe the name of each guest on a tiki hut cupcake and use the cupcakes for table place settings. For an extra sparkle, sprinkle edible glitter to the tops of the cupcakes or add miniature paper umbrellas. Add this to my Recipe Box.


Instructions


Baking Your Cupcakes


1. Preheat your oven at 350 degrees F. Place the 12 cupcake liners into the muffin tin. Set aside.


2. Add the 2 eggs, 1 tsp. vanilla extract, 2/3 cup sugar, ½ cup butter and 1 cup flour into the mixing bowl. Beat with the mixer on low speed for 20 seconds to incorporate the ingredients. Continue beating until the mixture is smooth and free of lumps and the batter is a shade lighter in color. If you use a standing mixer, the mixing time is approximately half of what it would take if you use a hand mixer.


3. Use the spoon to fill each of the cupcake liners to the halfway mark. Place in the oven and bake for 18 to 20 minutes. Remove when the cupcakes are golden-yellow, have risen and spring back when pressed on top. You also can insert a toothpick into a cupcake to check for doneness.


4. Let cupcakes rest for 10 minutes and remove to a wire cooling rack, leaving the liners intact. Let the cupcakes cool completely before decorating.

5. Measure each of the 12 sheets of card stock across the center and make a line indicating the radius on one side. Cut through the radius so the card stock has a slit. Roll each piece of card stock into a cone shape and secure the overlapping edge with a piece of tape.


6. Remove the paper liner from the cupcakes. Fill an icing bag with tan cake icing and insert the #47 icing tip. Make a basket weave pattern by squeezing icing into one vertical strip the height of the cupcake side. Turn the cupcake and add three horizontal lines, equal lengths apart as if you are writing the letter 'E.' Add another vertical stripe overlapping the ends of the horizontal stripes, and add two more horizontal stripes across the second vertical stripe. Continue all the way around the side of each cupcake.


7. Fill an icing bag with white icing and insert the #12 icing tip. Fill the inside of each cone with white icing and place the cones on top of each cupcake for the roof. Fill an icing bag with brown-yellow icing and insert the #133 icing tip. Make short strokes from the roof outward, starting at the base of the paper cone and moving upward in an overlapping pattern.


8. Fill an icing bag with black icing and insert the #3 icing tip. Create a door by making two vertical stripes starting at the bottom edge of the cupcake and extending two-thirds up the side.


9. Add food coloring in your choice of colors to small amounts of fondant. Form flowers with five petals and green leaves to attach underneath each flower. Make the flowers the size you want for your cupcakes, and form as many as you want to decorate your tiki huts. Arrange flowers in clusters or create a border between the cone roof and walls of the hut.
