Make Chicken Long Rice

Surprise! "Long rice" is actually noodles. As a side dish, this traditional Hawaiian recipe serves six to eight of your luau friends. Add this to my Recipe Box.


Instructions


1. Place the chicken in a large saucepan with enough water to cover.


2. Add the salt and ginger.


3. Cover the pan, bring to a simmer, and cook over moderate heat for about 1 hour or until the chicken is tender.


4. Allow the chicken to cool in the broth.


5. When completely cool, remove the chicken from the pan.


6. Skin the chicken, then bone it and cut the meat into small cubes (about 1/2 to 1 inch in length).


7. Strain the remaining chicken broth and set it aside.


8. In another large pan, saute the garlic and onion in oil for 2 minutes.


9. Add the noodles to the garlic and onion.


10. Cover the noodles with the reserved chicken juices.


11. Stir in the chicken and soy sauce.


12. Simmer 5 minutes or until the noodles are cooked.


13. Garnish with green onions.
