Make Gum Paste Frangipanis

White frangipanis with yellow centers are often replicated by bakers to decorate.


Gumpaste frangipanis are often used by professional bakers to decorate wedding cakes for an added look of elegance. The frangipani is a fragrant, tropical flower with red, pink or white tones and a contrasting center that is usually pink or yellow. With practice, the frangipani is one of the easier gumpaste flowers to make and the delicate result can add a special touch to cupcakes or a birthday cake. Add this to my Recipe Box.


Instructions


1. Sprinkle your workspace with powdered sugar.


2. Roll out the gumpaste and add more confectioners sugar as needed to prevent sticking. The gumpaste should be thin, but thick enough to work with without tearing. Cover any extra gumpaste with plastic wrap.


3. Cut out five teardrops with the cutter, then dust with powdered sugar.


4. Arrange the petals into a fan shape. Each petal should cover almost half of the petal it is laying against. Then, press the pointed ends together.


5. Gently grasp the ends with your left thumb on top of the ends and your index and middle fingers supporting the back.


6. Roll the petals into each other. The bottom petal should curve into the top petal that isn't covered by the four other petals and connect to form the flower.


7. Pinch the ends together, then trim the end with the knife.


8. Hold the base and open the petals gently, to create the desired flower shape. Set in the egg carton or chocolate box to dry.


9. Paint the inside of the flower with the luster once it has completely dried.
