Smoke A Whole Pig On The Big Green Egg

The true taste of smoked pork takes time to create. But with the big green egg, you don't have to constantly turn and adjust meat as it smokes. The big green egg will hold heat in maintain cooking temperature for hours, without needing additional fuel or adjustments. Add this to my Recipe Box.


Instructions


1. Rub the barbecue seasoning over the entire pig.


2. Place the pig in the refrigerator to marinate for at least four hours.


3. Place wood chips in a bowl of water or juice and leave them to soak for at least 30 minutes.


4. Fill the big green egg with charcoal. Mix wood chips in with the charcoal.


5. Put place setter with legs up on top of fire ring in big green egg.


6. Light the charcoal and adjust dampers until temperature stays at approximately 230 degrees F.


7. Place the pig in the big green egg. Cook for approximately 18 hours.


8. After 18 hours, check the pig's internal temperature. It should be at least 200 degrees F.


9. When the pig is cooked, take it off the big green egg and wrap it in foil. Let it sit for 30 minutes before serving.
